The LOCA Manifesto is our proposal for what 'sustainable gastronomy' should be for a modern company in our privileged part of the world. Today, the Manifesto is the foundation of our values and how we operate KILDEN and our other restaurants.
The short version is that we want to use great taste experiences to create positive changes across the Sustainable Development Goals and national borders.
Eating climate-friendly must rhyme with great taste experiences, otherwise we have not succeeded. But a sustainable diet is not just about eating local ingredients. There are many factors in play. Here, we rely on the United Nations' Sustainable Development Goals, where our industry can contribute as much as possible.
For us, sustainable gastronomy is much more than using the whole leek or choosing local ingredients. Our Manifesto deals with all aspects of the business: food, people, organisation, industry, world, and the Sustainable Development Goals.

LOCA's Manifesto was developed in collaboration with the Basque Culinary Center under the Gastronomy Shapers project in 2021. The Basque Culinary Center is a pioneering academic institution founded by prominent Basque chefs in collaboration with Mondragon University. Its purpose is to contribute to education, research, innovation, and the promotion of gastronomy and health. Its international advisory board includes some of the industry's most prominent figures, such as Ferran Adrià, Michel Bras, Heston Blumenthal, Dan Barber, and René Redzepi.
The idea for the current Manifesto was born when Merete Holst appeared as a guest lecturer in the Gastronomy Shapers program. The lecture was based on LOCA Gruppen's vision of making sustainable gastronomy accessible to more people and how gastronomy can be used to make a difference for many. In exchange for the lecture, the students from the Basque Culinary Center subsequently presented their various proposals for a universal manifesto for sustainable gastronomy. This included everything from handling waste in their own kitchens to alleviating hunger and inequality in the world as a whole. We then spent a long time boiling down the many good proposals, and today the result is a guide and a framework for LOCA Gruppen's purpose and work in the world.
